Campfire Apple Pie

Here is my Camp Fire Apple Pie recipe that I have perfected over the last 20 years.This pie was cooked in our bush camp on a private property 100 klms west of Springsure in Central Queensland.

Honestly this recipe is a favorite with everybody who tastes it – why not make it for your Family or show off your cooking skills to your mates around your next Camp.

It rely is easy and a “no fail recipe”, “Who doesn’t like a good Apple Pie”

Rod’s Recipe

  • 1 Cup of plain Flour
  • 1 Cup of self-raising Flour
  • ¼ Cup of Coconut (optional, but does make the pastry special)
  • ½ to ¾ cup of sugar (a good Bushman’s hand full)
  • 125 grams of butter /Marg.
  • approx. ¼ cup of water for dough
  • 8 large cooking Apples
  • 1 cup of water (to soften apples)
  • a pinch of Cinnamon
  • 2 tbl spoon of Sugar.

Peel and slice Apples (Granny Smiths  are best, Pink Lady good), simmer in a billy or pot 1 cup of water with 2 tbls of Sugar and a pinch of Cinnamon until the Apples are half cooked.

Combine plain and self-raising Flours, Coconut, Sugar, Butter and mix this all together until crumbled. Then add water and mix lightly until dough is not sticky (depends on how much butter / water is used – may have to add more flour. Dough should not be sticky)

Divide dough into two.

Drain softened apples (save some of the water)

Roll out dough and place one half into a greased enamel or stainless plate. Add the softened apples and place top on pie, trim around edge. Hint ! wet seam of pastry then put on pie lid and press together with handle of knife then trim – this ensures pie lid will stick to base.

Cut a small hole in the lid to allow steam to escape, then paint the top with milk or best of all the sugar / cinnamon water from the apples.

Sprinkle top of pie with raw or coarse grains of sugar (optional).

Cook in a large Camp Oven at 180 deg. C for ½ an hour

Serve hot or cold.
